In the vineyard, in the cellar
For this Drappier Brut Nature sulphur-free Champagne, the estate uses only first-press juices. Low-pressure mechanical presses. Gravity is used to avoid pumping, thereby preventing oxidation. Natural settling. Alcoholic fermentation for around two weeks at low temperature. Followed by natural and complete malolactic fermentation. No sulphur added. No filtration. 100% of the wines are aged in vats to preserve maximum freshness. After bottling, the cuvée is matured for two to three years on racks. Zero dosage.
