Description
A new Champagne from the Drappier estate, CLAREVALLIS is made from organically grown grapes on the Urville hillside, which was first planted during the Cistercian era. Clarevallis is an expression of the landscape and the land that has been tended by human hands since the 12th century. It is a Champagne with a grey-gold colour and a very fine, persistent mousse. On the nose, one discovers notes of elderflower, violet and spring-like floral notes, with a hint of greenery. The minerality is distinct, softened by the maturity of the Pinot Noir. On the palate, it is a fresh, very delicate champagne, with floral notes and a hint of citrus. The finish is long, with a lovely bitter note.

Drappier’s Clarevallis champagne is composed of 70% Pinot Noir, 10% Chardonnay, 10% Pinot Meunier and 5% Blanc Vrai. Jurassic Kimmeridgian limestone soil from Urville. Certified organic cultivation. First pressing, gravity-fed vinification, natural settling, malolactic fermentation. Organic yeasts from the estate, unfiltered and unbleached, extremely low in sulphites (20 mg/l). Dosage: 4 g/l (Extra Brut).
