Description
Emmanuel Giboulot’s Terres Burgondes is an IGP Sainte-Marie-la-Blanche (Burgundy). Having flourished in the first half of the 20th century and consisting largely of table wines, this vineyard has shrunk considerably with the decline in wine consumption. Today, a few dozen hectares of vines remain under the Protected Geographical Indication (formerly Vin de Pays) designation. The area is experiencing slight growth with a few new plantings. The geographical area in question corresponds to the Pliocene-Pleistocene low plateaus that form the geological bedrock of the region.

The soil
The ‘Marnes de Bresse’ substrate is covered by ‘Sables et Argiles de Chagny’, which consist of fine-grained, micaceous and calcareous materials containing lenses of sand.
The grape varieties
100% Pinot Beurot. Beurot is the Burgundian variety of Pinot Gris, which is on the verge of extinction. It takes its name by analogy with the monks’ brown robes. It differs from Pinot Noir in the grey colour of its berries.
The vineyard
This vineyard was planted with Pinot Beurot by Mr Paul Giboulot, Emmanuel’s father, and has an average age of 35 years. It is a tall, wide vineyard, grassed and cultivated organically since 1970, then biodynamically since 1996.
Vinification
The whole grapes are pressed and cold-settled for around 24 hours. The clear must is fermented in oak barrels that have previously held several wines, in order to preserve purity and minerality. The resulting wine is aged on lees for 12 months before bottling.
