Description
Gombaude-Guillot’s Pomerol embodies the harmonious blend of the appellation’s great wine terroir with an organic, biodynamic and natural approach. These wines are consistently elegant and well-balanced, combining finesse and complexity, with flavours that vary from vintage to vintage between blackberry and raspberry, before giving way to subtle roasted notes, sometimes with a hint of mint.
In the vineyard, in the cellar
- Cultivation: 6.50-hectare estate farmed organically since 1997 and biodynamically since 2006.
- Grape varieties: 75% Merlot and 25% Cabernet Franc (vines over 40 years old) on glacial gravel soil with a subsoil of swelling clay and iron-rich soil.
- Vineyard management: Suckering, light manual leaf removal, green harvesting. Mechanical soil cultivation, no mineral fertilisers, no herbicides, controlled grass cover with sowing (cereals and legumes).
- Harvest: Manual and plot-by-plot depending on ripeness, first sorting on the vine, destemming, second sorting berry by berry on a sorting table.
- Vinification: “Natural” (indigenous yeasts, no additives except a small amount of SO2 below 40 mg/l), pumping over and racking, vatting for approximately 3 weeks, malolactic fermentation in temperature-controlled concrete vats.
- Ageing: In oak barrels, 30–75% new depending on the vintage, concrete vats and amphorae for 12–15 months
