Description
The ‘Les Chênes’ cuvée from Domaine Grès Vaillant is a 100% Mauzac Limoux produced using organic methods. The slightly smoky nose reveals notes of rhubarb and green apple, with a hint of sea salt on the finish. On the palate, it is perfectly balanced, crisp, firm and fresh. A wine that will come into its own with smoked fish, sushi or fresh cheeses.
In the vineyard, in the cellar
- Appellation: Limoux
- Farming: Organic
- Terroir: Cool, high-altitude terroir on bedrock of sandstone, sometimes outcropping, with plots bordered by large, century-old white oaks.
- Grape variety: Mauzac planted in 2002 (planting density of 4,444 vines per hectare)
- Soil cultivation: vines worked with our three draught horses, Rustica, Colette and Carolus
- Harvest: Hand-picked into small 34-litre perforated crates and cooled with dry ice
- Fermentation: direct pressing and natural fermentation with indigenous yeasts (with a starter culture prepared in advance for each plot). Daily stirring in Burgundy oak barrels (400-litre Marsannay barrels and 228-litre Mercurey barrels) with 20% new oak.
- Ageing: 7 months in Burgundy oak barrels

Limoux white wines are unique in that they are the only appellation in the Languedoc region where fermentation and ageing must take place in oak barrels (by appellation decree).
