Description
The Pinot Noir ‘Le Pin’ from Domaine Grès Vaillant is an organic wine from the Haute Vallée de l'Aude (IGP) appellation. The charm of this Pinot Noir is evident from start to finish. The aromas of raspberries and blackcurrants detected on the nose (a delicate Pinotage) are echoed on the palate, which is rich, supple and savoury. The finish, long and harmonious, settles gently, much like the great Pin Pignon tree that stands in the middle of the vineyard plot.
In the vineyard, in the cellar
- Appellation: IGP Haute Vallée de l'Aude
- Farming method: Organic
- Terroir: Cool, high-altitude terroir on sandstone bedrock; the plot is bordered by forests and planted around a large ‘Pin Pignon’ pine tree, a companion to the vines.
- Grape variety: Pinot Noir planted in 2000 (planting density of 4,500 vines per hectare)
- Soil cultivation: vines worked with our three draught horses, Rustica, Colette and Carolus
- Harvest: Harvesting and vatting in three successive stages over 10 days (to achieve optimal ripeness and extend fermentation through successive additions of fresh grapes)
- Fermentation: natural, using indigenous yeasts from the plot
- Ageing: 6 months in oak barrels (75%, no new barrels) and stainless steel vats (25%)
