Description
The aromas and finesse of the Syrah (80%) lend this Cabardès a rare elegance for the region. Its profile is reminiscent of some beautifully crafted Rhône Syrahs. The nose is initially characterised by ripe black fruit. Then, gradually, notes of black olives, liquorice and hints of spice emerge. The full-bodied and generous attack is underscored by a very silky texture. Great elegance, reflecting the supple tannic structure.
In the vineyard, in the cellar
manages his entire vineyard using organic farming methods. He uses no chemical fertilisers or weedkillers, preferring to add organic matter and plough the soil to keep it alive. The vineyard is protected exclusively with organic products. All synthetic products are banned. This respect for the terroir ensures the preservation of the yeasts naturally present on the grape skins. Fermentation therefore takes place without the addition of industrial yeasts. The result is unpretentious wines, distinctly marked by their terroir of origin.
Guilhem Barré La Dentelle.
Clay-limestone terroir ‘Ventenac limestone’. Organic farming. Hand-harvested in small crates. Destemming, crushing, spontaneous fermentation (no added yeasts). Vatting for 15 days. Matured in vats. No fining. No filtration. Low sulphite content.
