Guilhem Barré Natural Mystic is quite likely the estate’s most impressive Cabardès. The nose displays lovely complexity, dominated by delicately oaky notes of black fruit (blackberry). The tannins are fine, the palate full-bodied, and the finish impressive. It stands out for its complexity, power and balance. A highly accomplished wine that does credit to the Cabardès appellation. Guilhem Barré treats us to a wine that reflects his own character: generous, lively, vibrant and natural.
In the vineyard, in the cellar
Guilhem Barré manages his entire vineyard using organic farming methods. He uses no chemical fertilisers or weedkillers, preferring to add organic matter and plough the soil to keep it alive. The vineyard is protected exclusively with organic products. All synthetic products are banned. This respect for the terroir ensures the natural yeasts on the grape skins are preserved. Fermentation therefore takes place without the addition of industrial yeasts. The result is unpretentious wines, distinctly marked by their terroir of origin.

. Clay-limestone terroir (Ventenac limestone). Organic farming. Hand-harvested. 80% of the Merlot destemmed, vatting for 4 weeks, 80% whole bunches. 100% of the Syrah destemmed, vatting for 2 weeks. Indigenous yeasts. 80% of the Merlot aged in 3- and 4-year-old barrels, the remainder in vats. 100% of the Syrah aged in vats. No fining, no filtration, low sulphite content.
