Aromatic precision (citrus notes, white flowers), minerality, and a mouth-watering tension: it has it all! … The body, combined with its vigour and the salty finish, makes it an ideal companion for the table. Unique terroir

The terroir’s uniqueness stems from the uplift of the limestone layers by the Morvan granite massif during its formation. The vineyard itself is situated on older limestone layers: the Bajocian, the Upper and Lower Bathonian for the most part, as well as the Lias. To this complex geology must be added the orientation of the vines, which is of course just as important! The estate’s vines face south-east to south-west. The south-west is particularly well-suited to Chardonnay as the sun shines later in the evening in September and ripeness is often better there.

La Soeur Cadette Chablis

La Soeur Cadette Chablis is a 100% Chardonnay grown on clay-limestone soils on the right bank of the Serein. 40-year-old vines. Pneumatic pressing. Natural settling by gravity. Alcoholic fermentation in stainless steel tanks and barrels (50/50) using indigenous yeasts. Barrel ageing for 8 to 10 months for 50% of the cuvée. Malolactic fermentation carried out. No sulphur added before the end of alcoholic and malolactic fermentation. Minimal adjustment before bottling. Light filtration using white clay.

Organic farming

The Domaine de la Soeur Cadette practises organic farming with conviction and without fuss. Weed control in the vineyards is carried out without synthetic chemicals, but through ploughing and hoeing throughout the growing season. Methods that respect the plants, the soil, the environment and quality of life.
