Known as the Réserve du Caveau, this Savagnin Tradition (under veil) cuvée from Lucien Aviet is a rare Arbois wine! … The grapes come from the fifty-year-old vineyards “Bruyères”, “En Levrin”, “Champ-Maudit” and “Château Gimont”. The wine is aged for four years in the same vein as a Vin Jaune; it has previously undergone fermentation in large casks before being racked into barrels and demi-muids. The typical aroma of voile wines is splendid: apple, walnut, dried fruit, curry and celery, underpinned by a subtle, toasty structure. The fresh, savoury palate is underpinned by a delicious texture that lends it a refined oxidative dimension. Absolutely superb!
In the vineyard, in the cellar
- Grape variety: 100% Savagnin
- Terroir: Soils composed of iridescent Keuper marl, laminated black marl, Gryphées limestone and silt
- AOP: Arbois.
- Cultivation methods: Sustainable viticulture. Hand-harvested. Full destemming.
- Vinification and ageing: Native yeasts. Direct pressing in the cellar, fermentation in large casks. Aged for 48 months in 228-litre casks and demi-muids under a veil of yeast. Filtered before bottling but not fined.
