Description
From its deep, purplish-garnet colour to its intense nose of ripe, almost candied fruit, one might expect to find extraordinary volume and power on the palate. This is not the case. The wine certainly has a firm structure, but its charm lies in its balance and its frank, vibrant tension. Cacahuète is clearly a wine of character, deep and complex, made for ageing, yet possessing unrivalled vitality.
In the vineyard, in the cellar
Organic cultivation. Vinification without added sulphites. Hand-picking using the ‘mille feuilles’ method. 20-day maceration in truncated-cone wooden vats. Very gentle manual punching down and very light pumping over using buckets, followed by gentle pressing. Long fermentation finish in barriques and ageing in barrels for 10 months.
