Description
The Moulin de Peyronin Romane white Bordeaux boasts a beautiful pale yellow colour with white-gold highlights. The nose is fresh and very expressive, with exotic aromas (mango, passion fruit, pineapple). The ageing notes (a hint of vanilla and some toasted touches) are subtle and perfectly integrated. The palate is fresh and lively at first, then broadens into a finish dominated by notes of ripe mango. The wine displays a pleasing tension, remarkable balance and a delicate, briny finish.
In the vineyard, in the cellar
Franck Terral cultivates his entire Moulin de Peyronin vineyard using certified organic methods. Biodynamic certification is pending. The Romane white Bordeaux is composed of 70% Sémillon, 20% Sauvignon Blanc and 10% Sauvignon Gris. The vines are 40 years old and grow on clay-limestone soil. Average yield of 30 hl per hectare. Cold pre-fermentation maceration. Exclusively indigenous yeasts. Limited sulphur addition. Fermentation and ageing on lees in barrels for 9 months (20% new barrels). A magical pairing with warm, gratinated oysters. It also goes well with all fish served with a champagne sauce or beurre blanc sauce. Grilled lobsters or langoustines. White meats. And all hard cheeses.
