Description
Monsieur Jacques is a white Burgundy from Julien and Sébastien Pacaud, created in tribute to their uncle. Sourced from vineyards in the communes of Leynes and Saint-Amour, it is a Chardonnay harvested by hand in whole bunches and taken directly to the press. Vinified without sulphur and using indigenous yeasts, aged on fine lees for 9 months in stainless steel and concrete vats. Delicate, supple and balanced, the citrus aromas finish with a hint of bitterness that contributes to the wine’s freshness. The ideal companion for an aperitif with fried whitebait, parsley ham or a few snails.

- GRAPE VARIETY: 100% Chardonnay
- VINEYARD: Vines in the communes of Leynes and Saint-Amour.
- SOILS: Ancient soils derived from Lower Triassic sandstone, with deep marl and alluvial scree. Depending on the plot, south, south-west and north-facing.
- VINIFICATION: Hand-harvested, whole bunches taken directly to the press. Direct pressing. Sulphur-free vinification using indigenous yeasts. Light settling.
- AGEING: Aged on fine lees for 9 months in stainless steel and concrete vats.
