Description
The Aux Faux cuvée from Domaine Pacaud is a fresh and powerful Saint-Véran that shines with its rich flavour. The vines are laid out in an ‘amphitheatre’ above the village of Chasselas. It is in this exceptional setting that the grapes ripen, making the most of their terroir and the sunshine. The aroma oscillates between citrus and white-fleshed fruits. The palate is perfectly balanced, carried by lovely tension and a hint of saltiness on the finish. An even greater delight when paired with a fillet of pike-perch in white butter sauce or pan-fried frogs’ legs.

Domaine Pacaud Saint-Véran Aux Faux:
- GRAPE VARIETY: 100% Chardonnay – vines aged 15 to 40 years.
- VINEYARD: Vineyards in the village of Chasselas, laid out in a theatre-like formation around the village, facing east, west and south
- SOILS: Various types of clay-limestone soil profiles ranging from more or less deep marl to shallow hard limestone, including lighter soils of limestone with entoclase
- VINIFICATION: Hand-harvested, whole bunches taken directly to the press. Direct pressing. Sulphur-free vinification using indigenous yeasts. Light settling.
- AGEING: On fine lees in 500-litre oak barrels (used for 4 to 6 vintages) for 10 months for 25%, the remainder aged in a blend of concrete and stainless steel vats. Light filtration using white earth
