Description
Pascal Doquet’s Anthocyanes is a rosé champagne with a slightly salmon-pink hue. On the nose, the wine reveals notes of wild red berries, before releasing aromas of riper fruit on the palate. It is a gastronomic champagne with a savoury and flavourful character. It has great depth and a lively effervescence that lends it freshness.
In the vineyard, in the cellar
- Terroir: Southern Côte des Blancs: Vertus (south-facing) and Bergères for the Pinot Noir, Le Mesnil and Vertus for the Chardonnay.
- Malolactic fermentation: Carried out.
- Rosé blend: 34% Pinot Noir vinified as a rosé through extended maceration and 66% Chardonnay. Blend of the 2011 (46%), 2010 (34%) and 2012 (20%) vintages. Entirely vinified in barrels.
- Bottling: April 2013.
- Dosage: 4.5 g/l
