Description
Produced by Paul Breton, the Pierres Rousses cuvée is a slender, dry Vouvray with a hint of salinity. The nose reveals aromas of quince, stone fruit, orgeat, citrus and lime blossom: a true classic of the grape variety. The balance between freshness, minerality, depth and ripeness is perfect. A flinty sensation accompanies the palate from start to finish in an extremely refined style. A wine that will shine as an aperitif and pair beautifully with poultry, fried fish or cheeses
In the vineyard, in the cellar
- GRAPE VARIETY: Chenin AOC Vouvray
- HARVEST: Hand-picked, with sorting in the vineyard and in the cellar to ensure no grey rot, which would impart off-flavours
- SOIL: Flinty clay in the commune of Vernou-sur-Brenne
- VINIFICATION: Pressing for 3½ hours with two re-pressings using a pneumatic press. 24 hours after racking, we carry out settling to separate the clear juice from the lees. Alcoholic fermentation takes place in barrels aged 1 to 2 years
- VINEYARD: 55-year-old vines certified as organically and biodynamically farmed
- AGEING: 10 months in 400-litre barrels, bottled in September.
