Description
A dazzling white Saumur from Domaine Bourdin Chancelle that combines aromatic complexity and lovely body with a fresh, precise structure. The nose oscillates between white fruits, citrus, white flowers and hints of gentian and ginger. The palate is rich and indulgent, without being overly rich, which allows the fruit’s sweetness to shine through. The finish is both rich and clean; the absence of malolactic fermentation ensures a refreshing profile. A very fine Chenin, distinctive and precise. This is undoubtedly a lovely bottle that will be enhanced when paired with fish such as pike-perch, fried fish from the Loire or creamy poultry dishes.
In the vineyard, in the cellar
At Domaine Bourdin Chancelle, the wines are made from hand-harvested grapes. The alcoholic fermentation of white wines, such as Saumur blanc, takes place in vats and casks over a period of 6 to 10 months. This ageing is carried out on the lees with regular stirring, without malolactic fermentation. Gentle vinification, no filtration and small doses of sulphur during bottling take place within the traditional setting of the ‘tuffeau’ cellars typical of the Saumur region.
