Stéphane Tissot’s distinctive Savagnin is an Arbois aged under a veil for over 30 months. In the vineyard, in the cellar
- Terroir: This wine comes from the clay soils of the Triassic period in the localities known as ‘En Spois’ and ‘La Vasée’
- Exposure: East and north-west
- Area for this wine: 2.30 ha
- Age of vines: Planting dates of the harvested vines: 1968 – 1974 – 1996 – 1997 – 2000
- Planting density: 7,000 vines/ha Production: 8,500 bottles
- Cultivation method: Biodynamically managed vines, Ecocert certified and Demeter inspected. The vines are cultivated without weedkillers, chemical fertilisers or synthetic products. We use sulphur, copper and herbal infusions to treat the vines. We produce and apply our own compost. These vines are fully ploughed.
- Harvest, vinification and ageing: Hand-harvested, destemmed, pneumatically pressed, lightly settled, spontaneous fermentation in vats, aged in 228-litre barrels on lees for 33 months without topping up, under a yeast cap. Bottled with light filtration. For all our oxidative wines, we use a small amount of sulphur (1 to 3g/hl) before fermentation. After oxidative ageing, sulphur is not necessary as it is ineffective (due to the combination of SO2 with aldehydes).
