Description
The Fleur cuvée from Domaine Jonc Blanc is a little gem of a white wine from the South-West, crafted by Franck Pascal and Isabelle Carles. This charming couple produce lively wines that are far more representative of their terroir than of any unlikely appellation. The nose develops aromas of white flowers, pear and citrus (grapefruit). The palate, with its lovely length, is rich, full-bodied and generous, yet retains a good freshness with a mineral and salty note on the finish. The decision to ferment and age on lees exclusively in stainless steel vats avoids any artificial ageing processes, resulting in great purity.
In the vineyard, in the cellar
The Fleur cuvée from Domaine Jonc Blanc is a blend of 39% Sauvignon Blanc, 28% Sauvignon Gris and 33% Sémillon. Vinified ‘au naturel’, it is, of course, neither chaptalised, nor yeast-added, nor enzymatically treated, nor sulphited, nor even filtered! Bottling in the spring, before the summer heat sets in, allows the wine to remain crystal-clear without filtration following a long ageing on fine lees.
Hand-harvested then directly pressed. Cold settling of the juice overnight. Natural fermentation in temperature-controlled stainless steel vats. No additives. Indigenous yeasts. Aged on fine lees in stainless steel vats for 16 months.
