Description
Sophie and Julien Ilbert’s ‘Au Cerisier’ (Combel La Serre) is a fruity Cahors so delightfully indulgent that it could easily be described as a ‘wine for sharing’ or a ‘thirst-quencher’. Juicy and full-bodied, the wine exudes aromas of red and black fruits (cherry, blackberry) and floral notes of violet. The profile is lively and radiant, with a fine, supple texture; the palate is silky and indulgent, the tannins are round, and the finish is taut and energetic… Nothing to complain about!
In the vineyard, in the cellar
The Cahors Au Cerisier de Combel La Serre cuvée in detail:
- GRAPE VARIETY: 100% Malbec (vines around 40 years old)
- TERROIR: A 1.1-hectare plot of red clay on limestone soil, situated at an altitude of 350 metres on the Causse and named “Au Cerisier” because a cherry tree still stands proudly in the middle
A breath of fresh air for “Black Wine”
Historically known as “Black Wine” due to the dark, purplish colour of its Malbec grape, Cahors has long been regarded as an austere wine. “Dad’s wines”, as they are sometimes referred to in tasting circles. However, spurred on by a new generation of winemakers, Malbec has been showing a new side for the past twenty years or so. Thanks to clean, small-scale viticulture, these new estates offer more approachable wines that emphasise fruit at the expense of extraction and structure. Among these new producers of wines that are a pleasure to drink, we can mention:
- Mas del Périé (Fabien Jouves)
- Combel La Serre (Julien Ilbert)
- Jérémie Illouz
- Château Les Croisille
- L'originel (Simon Busser)
- Clos Troteligotte (Emmanuel Rybinski)
- Domaine de l'Ostal (Louis Pérot)
What to eat with a Cahors Au Cerisier de Combel La Serre?
- Braised red meat
- Poultry
- Aperitifs and light dishes
