Description
Colombulle de La Colombière is a Pét' Nat made from Négrette grapes, produced using the traditional method. A modern brut rosé, naturally sparkling, crafted with patience and expertise. This wine offers notes of pressed fruit, strawberries, peaches and citrus, a delicate palate and very appealing, crisp bubbles. Best served well chilled as an aperitif, in a cocktail, with a festive buffet or with a lightly sweetened fresh fruit dessert.
In the vineyard, in the cellar
The Colombulle de la Colombière cuvée comes from a 1-hectare plot of Négrette. The average age of the vines is 35 years. White Boulbène soil. Organic and biodynamic cultivation. Hand-harvested when slightly under-ripe. Vatting, destemming and crushing. Direct bleeding of the juice. Natural vinification in vats then in bottle until complete conversion of natural sugars, riddling on the lees. Disgorgement July 2020. Total SO2 < 8 mg/L. Residual sugars < 3g/litre = BRUT NATURE.
The experts’ opinion
This iconic estate in the Villaudric terroir produces particularly authentic and easy-drinking wines. A determined and enthusiastic young winemaking couple, Diane and Philippe Cauvin have chosen since 2006 to manage their vineyard using biodynamic methods (certified in 2012). Always full of energy, they have made a name for themselves with a first-class wine tourism offering for groups and individuals alike. Available in several vintages, some made entirely from Négrette, the style of La Colombière’s wines is balanced, refined and subtle, without artifice or embellishment. This exemplary personal vision serves as a valuable benchmark in the current development of the Fronton appellation.
