Description
Grown on the first plots surrounding the farm, Clos des Mourres’ NoVice cuvée embodies the essence of the estate. It boasts an intense colour with violet hues. The nose offers lovely depth, revealing notes of black fruit and spices, as well as the aromatic herbs of the garrigue.
In the vineyard, in the cellar
Plots of Grenache (60%), Syrah and Mourvèdre on sandy soil situated around the Clos des Mourres farm in Vaison-la-Romaine. Vinification in concrete vats.
Organic cultivation, complemented by biodynamic practices in line with personal convictions to maintain living soils and authentically express the terroir. Work in the vineyard follows the lunar calendar; ploughing and grubbing take place two to three times a year; vinification involves gentle extraction, minimal handling, short vatting, and fermentation with natural yeasts; no chemicals are used. Sulphiting of 1g at bottling.
What to eat with a Clos des Mourres NoVice?
Simple dishes. Grilled meats, Provençal vegetable tian, a piece of grilled red meat, poultry, duck with olives, beef stew, rabbit with prunes, aubergine and tomato gratin, lasagne. As for cheese, try uncooked pressed cheeses, a slightly matured Saint-Nectaire, or a sheep’s milk tomme.
