Description
The highly calcareous soils, rich in silica (aragonite), give their name to this Mâcon Cruzille cuvée from Julien Guillot (Clos des Vignes du Maynes). The aromatic complexity is captivating: ripe citrus fruits, mandarin, quince, honey, spices, almonds… The expression is equally impressive on the palate, with a flawless balance between fullness and sharp minerality. A gastronomic profile that brings out the best in Asian cuisine: a Thai prawn stir-fry, for example.

- Terroir: The soil is shallow, ranging from 15 cm to 50 cm in depth, and is of a clay-limestone type. It consists of clayey silt formed by colluvial processes on top of weathered pure silt that is highly calcareous and rich in silica, which gives the wines a lovely minerality.

- Ageing: on lees for 10 months without racking / Blended in vats 40 days before bottling with 1 or 2 g of SO2 depending on exposure to air
