Description
An iconic wine from the Comte Abbatucci estate, the Faustine cuvée is a wonderful representation of Corsica, harmonious and alluring. Characterised by a cherry colour with ruby highlights, the powerful nose immediately evokes the maquis. From the attack to the finish, this wine is characterised by its beautiful aromatic palette. Aromas of dark fruit with a certain complexity (wild berries from the maquis) with a subtle note of red fruit. It also gives way to flavours of spice and pepper. Supple and crisp tannins.
In the vineyard, in the cellar
- Grape varieties: Sciaccarello, Nielluccio
- Terroir: Granitic soil
- Exposure: North to North-West
- Farming method: Biodynamic with influences from phytotherapy practices. Ploughing by horse and control of winter grass growth thanks to our flock of sheep.
- Harvest: Hand-picked into small-capacity trailers to preserve the grapes. Systematic sorting of the grapes in the vineyard and in the cellar.
- Vinification: Grapes received by gravity, uncrushed. Vinification in temperature-controlled concrete vats and truncated-cone casks. Maceration for several weeks, alternating between punching down and pumping over.
- Ageing: On fine lees for 6 months. Fining if necessary and natural tartaric stabilisation by cold storage. Light filtration at bottling if necessary.
