Description
The crystal-clear Ente plum brandy from Domaine Brana is made from a plum variety native to the Basque Country. At their peak of ripeness, the plums are fermented under controlled temperatures, then patiently distilled in copper pot stills using a double-distillation process, chosen to ensure the brandy’s finesse. The nose is both delicate and concentrated, underpinned by the intense aromatic power characteristic of this variety of plum. On the palate, it unfolds with a sensation of fresh plum that feels as though you are biting into the fruit, before giving way to a smooth, delicate and long finish. Best served well chilled at a temperature of 5–6°C.

Production
The plums, which have been carefully sorted to ensure the best and most consistent ripeness possible, are fermented in temperature-controlled stainless steel vats. The fermented fruit is stored in an airtight environment to prevent any deterioration prior to distillation. This takes place in our red copper pot stills using the ‘repasse’ method, a slow process that allows for strict controls, greatly enhancing the quality and finesse of the eau-de-vie.
Ageing
Ente plum brandy is aged in stainless steel vats to preserve the fruit’s full freshness. The development of the esters is monitored periodically until the optimum maturity is reached for bottling. See the estate’s profile
One of the secrets lies in the maceration and the choice of alcohol used to macerate the pears, which must be of the utmost freshness. This maceration is periodically monitored and homogenised until the ideal moment for distillation arrives. Maceration that is too long or, conversely, too short is detrimental to the desired quality. Distillation then takes place using red copper stills under the watchful eye of the patient distiller, Martine Brana.
