Description
Combel La Serre’s ‘White Elephant’ is a blend of Vermentino and Sauvignon, vinified using a minimalist approach to preserve the wine’s aromas and freshness. The nose reveals citrus, white-fleshed fruits (pear), a few floral notes and a hint of herbaceousness. An easy-drinking wine with a decent length that lends it a delicious character. A charming, unpretentious wine that pairs beautifully with salmon in all its forms and complements a wide range of cheeses.
In the vineyard, in the cellar
’ cuvée in detail:
- Grape varieties: 20% Sauvignon, 80% Vermentino
- Terroir: a single plot of clay-limestone soil situated on the Causse (320 m above sea level).
- Vinification: Direct pressing of whole bunches. The two grape varieties were vinified separately and then blended in a cement vat for ageing.
