With his La Clé de Saule cuvée, François Laborie (Domaine Les 3 Saules) showcases Cabernet Sauvignon (80% blended with 20% Merlot). A full-bodied profile, bursting with fruit, dominated by blackcurrant, with hints of pepper and a structure that is already well integrated. And no, Cabernet Sauvignon doesn’t taste ‘peppery’ when it’s fully ripe… a lovely bottle to pair with a duck parmentier or red meat in a sauce.

- Soil and vines: Loamy-clay and pure clay
- Vinification and ageing: natural fermentation with indigenous yeasts. 100% destemmed grapes, 10 days’ maceration. Virtually no pumping over. 1 year’s ageing in vats. Sulphur 1 mg/L at bottling.
- Ageing potential: 5 to 10 years.
