Description
Freshness, vibrancy and indulgence characterise this lovely, sparkling DBulles from Domaine de Brin, made using traditional methods. The Mauzac Rosé gives the wine its distinctive aroma, centred on apple and accompanied by a magnificent floral bouquet. The fine bubbles sparkle elegantly against notes of lemon. With just 10% alcohol, it offers maximum pleasure and a crisp, refreshing finish. A pure delight to accompany a handful of gougères, oysters, or even a timbale of crayfish.
In the vineyard
- 80% Mauzac Rose and 20% Ondenc
- Very stony clay-limestone soil, east-facing, altitude 260m
- Natural grass cover and sowing of green manure between the rows during the winter, with shallow tillage before the summer heat
- Multiple manual and mechanical operations throughout the year to ensure the grapes are well-aerated, healthy and fully ripe
- Pruning, debudding and suckering according to Poussard principles, respecting the vine’s sap flow
In the cellar
- Manual harvesting of the grapes according to the optimal ripeness of the different grape varieties
- Direct pressing of whole bunches followed by settling of the must using cold only
- Spontaneous fermentation with indigenous yeasts
- Secondary fermentation using the traditional method: fermentation resumes in the bottle using the grapes’ natural sugar without the addition of yeast
- Slow fermentation in the bottle followed by disgorging
