Description
The colour of this Gaillac Vendémia from Domaine de Brin is deep yet translucent. Aromas of red and black fruits (sloes, wild strawberries) intertwine with hints of white pepper. The Gaillac Vendemia cuvée from Domaine de Brin
is composed of 65% Duras, 25% Braucol and 10% Prunelart. Clay-limestone soil, south-facing, altitude 285 m. Natural grass cover between the rows and soil cultivation between the vines. Multiple manual and mechanical operations throughout the year to ensure well-aerated, healthy and fully ripe grapes with a low yield of around 30 hl/ha.
Manual harvesting of the grapes according to the optimal ripeness of the different grape varieties. Stems removed to vinify only the grape berries. Spontaneous fermentation using indigenous yeasts naturally present on the grape skins. Vatting for approximately 15 days with manual punching down alternated with occasional pumping over to encourage the extraction of colour, tannins and aromas. The wine is aged for 18 months exclusively in vats. Natural clarification without fining. Bottled without filtration. Aged without sulphur; very low sulphite levels added prior to bottling.
