Description
’s Arbois Pupillin Foudre à Canon is a splendid ‘ouillée’ (naturé) interpretation of Savagnin. Julien Maréschal ages this wine on its lees for 20 months in large oak casks. The wine captivates the palate with its delicate balance between richness and vibrancy. Hints of curry and a lovely salinity accompany the long, lingering finish.
In the vineyard, in the cellar
The Domaine de la Borde’s Cuvée de Savagnin Naturé Foudre à Canon is a wine from the Arbois Pupillin appellation. Its terroir consists of grey and blue schistous marl from the Lias period. Area of schist-covered slopes, gradient (30%), altitude 400 m. Hand-harvested, partial destemming (50%), cold static settling (10°C) for 12 to 24 hours, alcoholic fermentation in casks (600L to 1500L), aged on lees for 20 months.
Julien Maréschal runs his Domaine de la Borde using organic and natural farming methods. Respect for the terroir is reflected in key principles such as natural grass cover and soil cultivation (ploughing, ridging, scarification, etc.). No chemical weed control, contact treatments without synthetic molecules… But also experiments in biodynamics since 2009 (horn manure and horn silica applied to all the vines). The harvest is, of course, carried out by hand at the exact point of ripeness, with rigorous sorting taking place in the rows and in the cellars. In the cellar, only indigenous yeasts are used and very little SO2 is added to remain as true to the terroir as possible.
