The Arbois Pupillin Vice Versa from Domaine de la Borde is a distinctive Savagnin. It is grown on a terroir of schist-rich blue clay from the Lias period. This is a truly beautiful ‘voile’ wine (aged for 26 months without topping up). A pure, straightforward Savagnin, free from artifice.
In the vineyard, in the cellar
The Domaine de la Borde’s Les Ecrins cuvée is a distinctive Savagnin from the Arbois Pupillin appellation. The terroir consists of deep, schistose grey and blue marl from the Lias period, facing south-west on a steep slope (25%). Altitude: 350 m to 450 m. Vines tilled and tended without weedkillers or synthetic products. Hand-harvested. 100% Savagnin, fully destemmed. Alcoholic fermentation in stainless steel vats, ageing on lees during malolactic fermentation, then left to age (oxidative ageing, without topping up for 26 months).
Julien Maréschal runs his Domaine de la Borde using organic and natural farming methods. Respect for the terroir is reflected in key principles such as natural grass cover and soil cultivation (ploughing, earthing up, scarification, etc.). No chemical weedkillers, contact treatments without synthetic molecules… But also experiments in biodynamics since 2009 (horn manure & horn silica applied to all the vines). The harvest is, of course, carried out by hand at the exact point of ripeness, with rigorous sorting taking place in the rows and in the cellars. In the cellar, only indigenous yeasts are used and very little SO2 is employed to remain as true to the terroir as possible.
