- Carefully timed harvests help preserve the fruit’s freshness. Vinification is meticulous, with pumping over and gentle punching down to highlight the terroir. Ageing lasts an average of 15 months in barrels, with 40 to 45% new oak, followed by 3 months in vats before bottling.
