The Chablis 1er Cru Vau de Vey from Domaine de l’Enclos displays lovely ripeness balanced by a refined and delicate profile, with the freshness typical of this vineyard site. Indeed, it is the coolest vineyard site in Chablis, facing east and situated on a steep slope. The bouquet evokes orchard fruits, floral notes and subtle spices. Chablis 1er Cru Vau de Vey, flagship climat
This Chablis Premier Cru climat takes its name from the Latin ‘vadum’, meaning ‘wet, marshy place’. Vau de Vey is a flagship climat on the left bank. Under its banner, it encompasses Vaux Ragons, together forming a 40-hectare enclave of vineyards. Facing south-east, Vau de Vey benefits from the morning sun. It is therefore a cool climat, a coolness reinforced by the north wind that sweeps through the valley. The grapes therefore need time to ripen. Another distinctive feature is that Vau de Vey clings to almost vertiginous slopes! In fact, mechanisation is virtually impossible in some places! As for the soil, the roots too face the harshness of the elements: a thick layer of Kimmeridgian marl gives them a hard time.
What is a flagship Chablis climat?
The Chablis vineyard comprises 79 cadastral sites designated for wine-growing within the defined area of the Chablis Premier Cru appellation. The INAO (Institut National de l’Origine et de la Qualité) has grouped these into 40 Climats that may be indicated on the bottle labels. In reality, only around twenty of these are commonly used.
A distinctive feature of Chablis is that these 40 Climats include 17 principal Climats, also known as ‘flagship’ Climats. Wines produced in the Climats neighbouring these principal ones may either bear the name of the Climat from which they are geographically derived, or take the name of the flagship Climat to which they are linked.
