Description
With this Cabardès vintage aged in amphorae, Guilhem Barré has made a wonderful foray into this new winemaking method. He has produced a complex wine with a spicy character. The fruit is magnificent, enhanced by a hint of ‘damp earth’. The body is slender and flavourful, with refined tannins. The wine is beautifully balanced and gains a fresh, distinctive vigour from contact with the terracotta amphora.
In the vineyard, in the cellar
manages his entire vineyard using organic farming methods. He uses no chemical fertilisers or weedkillers, preferring to add organic matter and plough the soil to keep it alive. The vineyard is protected exclusively with organic products. All synthetic products are banned. This respect for the terroir ensures the preservation of the yeasts naturally present on the grape skins. Fermentation therefore takes place without the addition of industrial yeasts. The result is unpretentious wines, distinctly marked by their terroir of origin.
