Description
Les Cailloux is an ultra-mineral Rully cuvée from the Les Champs de l’Abbaye estate. It comes from the Les Cailloux vineyard, on the Rully plateau overlooking the Côtes Chalonnaise. The soil on this plot is very stony, forcing the vines to send their roots deep into the ground to find nourishment, which explains the minerality of the wines produced here.
In the vineyard, in the cellar
The vineyard is situated on a slab of hard limestone covered by a ‘field of stones’ and very little fine soil. East-southeast facing, very well ventilated. Cultivation: ploughing resumed in 2015 after 10 years of grass cover. Vine age: 35–40 years – Area: 0.5 ha – Yield: 35 hl/ha. Pneumatic pressing of whole bunches – Natural yeasts – Alcoholic and malolactic fermentation in barrels (30% new) – Light fining (bentonite) and filtration through a pure cellulose disc.
