Description
The Limoux from Domaine Mouscaillo has established itself as a true benchmark for white wines from the appellation, and indeed from the whole of Languedoc. This cuvée, made from 98% Chardonnay (supplemented by a touch of Chenin and Mauzac), produces a complex, lively and mineral wine. On the palate, it is characterised by notes of pear, mirabelle plum and white flowers, which unfold into an absolutely sumptuous, briny finish. Built for long ageing, the wine can be enjoyed now and offers a multitude of gastronomic pairings.
In the vineyard, in the cellar
- Grape varieties: Chardonnay 98%, Chenin 1% and Mauzac 1%.
- Average age of vines: Between 21 and 49 years.
- Vine density per hectare: 5,500 for the older vines and 7,500 for the younger ones.
- Soil type: Clay-limestone
- Terroir: 2 plots at an altitude of 400m; north/south facing, influenced by 3 climates: Pyrenean (predominant), oceanic and Mediterranean.
- Yields: 42 to 50 hl/ha.
- Harvest method: Hand-picked with rigorous sorting in the vineyard.
- Vinification and ageing methods: Cold settling for 48 hours. Fermentation in demi-muids (5 and 6 hl) made from French oak aged between 1 and 17 years. Very few new barrels (replacement only where necessary). Malolactic fermentation carried out. Matured on lees in demi-muids with bâtonnage for 11 months, followed by 12 months’ bottle ageing in our cellar.
