Description
Pascal Doquet’s 1er Cru Mont Aimé Champagne is a fresh and delicate Blanc de Blancs. It is perfect as an aperitif. Made from grapes grown in the Premier Cru terroir of Coligny, this cuvée is partly aged in oak barrels. On the nose, it offers notes of almonds, dried fruit, lemon and vanilla. The palate is rich and structured, with a mid-palate of ripe fruit and a lovely finish.
In the vineyard, in the cellar
- Terroir: Le Mont Aimé (Coligny commune, southern tip of the Côte des Blancs).
- Selection from specific plots. Terroir on sandy, stony chalk (silica).
- Malolactic fermentation: Carried out.
- Ageing: 6 months on lees, 36% aged in old oak barrels and 64% in enamelled steel vats.
- Blend: 100% Chardonnay. 2006 vintage.
- Dosage: 3.5 g/l
