Description
This Patchwork Chardonnay is a fantastic introduction to Stéphane Tissot’s world of Arbois wines. The bouquet is a delight of citrus (lemon, mandarin) and flint, enhanced by hints of smoke and toast. The complex palate is bursting with energy, the minerality is distinct, and the finish is clean and briny.
In the vineyard, in the cellar
Stéphane Tissot’s Arbois Chardonnay Patchwork cuvée in detail:
- Terroir: Five vineyards contribute to the blend of this cuvée: En Courçon, Le Moulin, Le Pont, La Régol and Les Corvées sous Curon. 60% clay soils – 40% limestone soils (Bajocian scree)
- Exposure: predominantly west
- Area for this wine: approximately 3.5 hectares
- Age of vines: Planting dates of the harvested vines: 1962 – 1974 – 1978
- Planting density: 7,000 vines per hectare
- Production: 13,000 bottles
- Cultivation method: Biodynamically managed vines, certified by Ecocert and Demeter. The vines are cultivated without weedkillers, chemical fertilisers or synthetic products. We use sulphur, copper and herbal infusions to treat the vines. We produce and apply our own compost. These vines are fully ploughed.
- Harvest, vinification and ageing: Hand-harvested into crates, pneumatic pressing, spontaneous fermentation, fermentation and ageing in 228-litre barrels (10% new) for 12 months, light filtration before bottling. Total SO2 content less than 40 mg/litre.
