Description
A blend of three grape varieties—Pinot Noir, Trousseau and Poulsard—Stéphane Tissot’s La DD is an Arbois wine macerated in century-old casks and vinified without sulphur. Perfect for pork dishes and those with a hearty appetite, the wine boasts a ripe, full-bodied fruitiness complemented by subtle spices. A true treat, offering a smooth palate with velvety tannins.
In the vineyard, in the cellar
- Soil: 50% Triassic clay – 50% limestone
- Grape varieties: 40% Trousseau – 30% Poulsard – 30% Pinot Noir
- Area under vine for this wine: 4 ha
- Age of vines: 35 years
- Planting density: 7,000 vines per hectare
- Cultivation methods: biodynamic viticulture, Ecocert certified and Demeter inspected; some of the vines are in conversion. The vines are cultivated without weedkillers, chemical fertilisers or synthetic products. We use sulphur, copper and herbal infusions to treat the vines. We produce and apply our own compost. These vines are fully ploughed.
- Harvest, vinification and ageing: manual destemming for the Poulsard and Trousseau. Whole-cluster harvest for the Pinot Noir with one month’s sulphur-free maceration. Maceration in century-old casks for most of the Poulsard and Trousseau for three months without the addition of sulphur. Vinification comparable to André TISSOT’s first wines (DD). Fairly short ageing followed by bottling, always without sulphur
