Vincent Charlot’s Rubis de la Dune champagne is a rosé made using the saignée method. The nose reveals a magnificent bouquet of red fruits, underpinned by a subtle vinous character. A truly lovely wine for lovers of rosé champagnes.
In the vineyard, in the cellar
Rubis de la Dune is a champagne from the Mardeuil terroir. Vines planted in 1955 on the site known as La Dune. Clay-loam soil with flint. Mass-selected vines grafted using the cleft method onto 3309C rootstock. Vinified in oak barrels for 8 months. Exclusively indigenous yeasts. No malolactic fermentation. No fining, no filtration. Champagne made exclusively from the 2011 harvest. 1,900 bottles. Extra brut dosage.
The winemaker
is an unconventional and fascinating Champagne
winemaker based in Mardeuil, a stone’s throw from Épernay. He works organically, but above all biodynamically, on a multitude of small plots around Épernay. Passionate and inexhaustible, he makes his own compost and preparations and grows most of the plants he uses himself. For over 15 years, he has been doing exceptional work to revitalise the soil, fauna and flora. His wines are the very embodiment of this vital energy that many winemakers, journalists and researchers come to admire.
What to eat with a Vincent Charlot Rubis de la Dune champagne?
As an aperitif. A dessert of red berries (strawberries).
