In the vineyard, in the cellar
Limestone terroir, east-facing. Steep slope. Light, gravelly and well-drained soils. Age of vines: 50 years. Yield of 25 hl/ha – 30% whole bunches. Indigenous yeasts. Vatting time: 9 days. Racking before the end of alcoholic fermentation. Matured in barrels, 30% of which are new. Ageing period: 10 months in barrels.
