Domaine Giraudon, EcoPhyto initiative in Chitry

Aurélie Giraudon Chitry

The Giraudon estate is situated in the heart of the quintessential Burgundian village of Chitry. Marcel Giraudon and his children, Aurélie and Thibaut, run the traditional family vineyard, which has been in the family for several generations.

Hand-harvesting, soil management and controlled natural grass cover, short Guyot pruning combined with EcoPhyto protection, and sustainable development practices. Precise temperature control during fermentation and vinification in stainless steel vats enable the production of authentic, natural and distinctive wines. The sole aim of this vinification process is to bring out the full aromatic and flavour potential of the grapes and the characteristics of the vintage.

Today, the estate is committed to the EcoPhyto approach to producing authentic, natural and distinctive wines.

Today, the farm covers around thirty hectares, divided as follows:

The Chitry appellation

The Chitry vineyard covers the hillsides surrounding the valley in which the village lies. The aspect is north-north-west to south-south-east. These slopes belong to the Upper and Middle Kimmeridgian stages of the Jurassic period. The clay-limestone soil is highly conducive to producing quality wine. Chitry, traditionally known as Chitry-le-Fort, was granted the right in 1993 to label its wines within the Burgundy appellation under the name BOURGOGNE CHITRY. The range includes white, red and occasionally rosé wines, alongside a remarkable Burgundy Aligoté.

Wines produced using the EcoPhyto approach

The grapes are harvested by hand at Domaine Giraudon. Soil management and controlled natural grass cover, short Guyot pruning. We also use the EcoPhyto approach and implement sustainable development practices. Temperature control during fermentation. The decision to vinify in stainless steel vats enables the production of authentic, natural and distinctive wines. The sole aim of this vinification process is to bring out the full aromatic and flavour potential of the grapes and the characteristics of the vintage.
