Description
Produced using organic farming methods and promoting biodiversity, Badia a Coltibuono Chianti Classico is a very pure expression of Sangiovese. The colour is a vivid ruby red. The nose reveals layers of iris, violet, tobacco, black pepper and cherry. The wine is well-balanced, supported by supple tannins and mineral notes. A refreshing and lingering freshness accompanies the palate throughout.
Organic farming and environmental sustainability
The Badia a Coltibuono estate is committed with enthusiasm and determination to protecting natural resources: soil, animals and people. Here, man works in harmony with nature to produce wines that respect the environment. But also the people who live there, biological rhythms and the rhythms of nature. Maintaining the health of the vines is the starting point of the organic approach: controlled grass cover to increase the soil’s organic matter and curb erosion, thereby making the plants more resistant to disease.
In the vineyard, in the cellar
Badia a Coltibuono Chianti Classico comes from the Chianti Gaiole production area (Castelnuovo Berardenga) at an altitude of 260–370 metres. The soil consists of clay and limestone. The wine is made entirely from Sangiovese grapes. Vinification
begins with fermentation using indigenous yeasts, followed by maceration on the skins for three weeks. This is followed by 12 months’ ageing in French and Austrian oak barrels of various sizes.
What to eat with a Badia a Coltibuono Chianti?
Gnocchi gratin with Bolognese sauce and Comté cheese. Lasagne. Summer-style Occo Bucco. Bistecca alla Fiorentina (a huge T-bone steak cooked over charcoal, served rare and accompanied by a wedge of lemon).
