Description

Drappier Millésime d'Exception champagne captures the essence of a vintage in a bottle moulded in memory of a particular year. The nose is highly complex, revealing notes of white fruit, almond and fresh ginger. The palate is slightly creamy, with lovely tension and a hint of brioche. A floral touch attests to the high proportion of Chardonnay, whilst the depth of the Pinot Noir expresses itself in the form of red fruits and lovely bitter notes.

In the vineyard, in the cellar

Only first-press juices are used. Low-pressure mechanical presses. Gravity is used to avoid pumping and oxidation. Minimal use of sulphur (less than 30 mg/l). Natural settling. Alcoholic fermentation for approximately 2 weeks at a controlled temperature. Natural and complete malolactic fermentation. 50% of the wine aged in large oak casks for 1 year. No filtration. The disgorging date is shown on each label. Dosage: 5.6 g/l, liqueurs matured in Limousin oak vats.

Terroir, organic farming and natural winemaking

Protecting the environment and the climate is not just a stance. Organic farming applies to the bulk of production, from non-vintage bruts to the grand cuvées. Furthermore, as he is intolerant to sulphur, Michel Drappier offers champagnes with minimal sulphur content. Notably, a brut nature that is completely sulphur-free.

What to drink with a Drappier Millésime d'Exception Champagne?

Ideal as an aperitif. Perfect with grilled sea bass with aniseed and lemon, risotto, or sole à la plancha. Veal blanquette with orange and sweet potatoes. Andouillette de Troyes with Champagne, white pudding with apples and foie gras, or Bleu des Causses.
