In the vineyard, in the cellar
At the Bourdin Chancelle estate, the wines are made from hand-harvested grapes. Alcoholic and malolactic fermentation for the Saumur Champigny takes place in vats, followed by ageing for 6 to 12 months in large oak casks. Gentle vinification, no filtration and small doses of sulphur during bottling take place within the traditional setting of the ‘tuffeau’ cellars typical of the Saumur region.
