This naturally sweet wine from Domaine de Brin is a truly daring creation made entirely from Cabernet Sauvignon: it took real courage, but Damien Bonnet pulled it off! … The aromatic intensity is sublime: candied red fruits, wild strawberries, plum jelly and a hint of blood. On the palate, it is fresh, smooth and mouth-watering. Made from sun-dried grapes, the wine offers a perfectly integrated, tangy sweetness with just 10% alcohol. Perfect with red fruit desserts or a foie gras terrine with red fruits.
In the vineyard
- 100% Cabernet Sauvignon
- Clay-limestone soil, south-facing, altitude 280m
- Natural grass cover and sowing of green manure between the rows during the winter, with shallow tillage before the summer heat
- Multiple manual and mechanical operations throughout the year to ensure the grapes are well-aerated, healthy and fully ripe
- Pruning, debudding and suckering according to Poussard principles, respecting the vine’s sap flow
In the cellar
- Late manual harvest of the grapes after the berries have ripened through sun-drying
- Direct pressing of whole bunches followed by settling of the must solely through cold
- Slow fermentation of the wine over the winter using indigenous yeasts until the right balance of alcohol, sugar and acidity is achieved. Fermentation halted by simple filtration
- Early bottling to avoid sulphiting and preserve the fruit aromas
