Description
This 100% Mauzac vintage from Damien Bonnet at Domaine de Brin is a magnificent success! Vinified and aged in oval stoneware vats (jars), the wine shines with its great aromatic purity: a balance of green apple, citrus notes (mandarin) and a hint of fresh almond. The palate is finely chiselled with a ripe tension; it unfolds with a full, fluid texture perfectly balanced between bitterness and acidity. Perfect with herb-crusted cod and lime.
In the vineyard

- Very stony clay-limestone soil, south-facing, altitude 280m
- Natural grass cover and sowing of green manure between the rows during the winter, with shallow tillage before the summer heat
- Multiple manual and mechanical operations throughout the year to ensure the grapes are well-aerated, healthy and fully ripe
- Pruning, debudding and suckering according to Poussard principles, respecting the vine’s sap flow

- Manual harvesting of the grapes at the optimal ripeness for the grape variety
- Direct pressing of whole bunches
- Spontaneous fermentation with indigenous yeasts
- Ageing of the wine without sulphur in 1,000-litre stoneware jars. Thanks to its low porosity and thickness, this container preserves the characteristics of the grape varieties: freshness and fruit
