Description
Le Moulin is a lovely wine from the Romany estate
that truly reflects the character of the Beaujolais region’s granite soils. Aged and vinified without sulphur, this Gamay from vines over 60 years old shines with its aromatic precision (wild strawberries, cherry, wild raspberry). On the palate, it is supple, with a velvety texture and fine tannins, offering a lovely tension on the finish. A harmonious and well-rounded wine that pairs perfectly with a traditional Lyonnais sausage or, for a more daring choice, with soy-glazed salmon.

- Vinification: Harvested exclusively by hand at optimal ripeness, sorted at the vine and on the sorting table. Vatting via conveyor belt. Whole-bunch maceration, semi-carbonic for 18 days. Daily pumping over, 3 rackings, 2 punch-downs. Vinification and ageing without sulphur, using natural yeasts from the grapes.
