Description
Le Pré aux Dames from the Huber-Verdereau estate is a white Burgundy Côte d'Or. It is made from old Chardonnay vines on the outskirts of the Puligny appellation. A few muscat-style Chardonnay grapes lend the wine an exotic aromatic quality against a fresh, taut structure.
In the vineyard, in the cellar
Certified organic and biodynamic cultivation. Use of compost in the vineyards, regular ploughing to maintain the soil. No synthetic products are used, only Bordeaux mixture and herbal infusions (dandelion, nettle, horsetail, birch, etc.). Work is carried out in accordance with the phases of the moon and certain planetary positions. Yields are strictly controlled. Traditional winemaking methods.
The Le Pré aux Dames white Burgundy comes from a 0.48-hectare plot of 50-year-old vines. Harvested exclusively by hand, in 50-litre crates. Pneumatic pressing of whole grapes for 4 hours. Cold static settling for 24 hours. 100% of the juice is fermented in 228L, 350L and 500L barrels. Alcoholic fermentation in stainless steel vats at a maximum temperature of 24°C. Racking and filtration using kieselguhr prior to bottling.
