In the vineyard, in the cellar
Certified organic and biodynamic cultivation. Use of compost in the vineyards, regular ploughing to maintain the soil. No synthetic products used, only Bordeaux mixture and herbal infusions (dandelion, nettle, horsetail, birch, etc.). Work carried out in accordance with the phases of the moon and certain planetary positions. Yields carefully controlled. Traditional winemaking methods.
The Coteaux Bourguignons from the Huber-Verdereau estate comes from a 31-are plot of vines that are nearly 60 years old. Harvested exclusively by hand, in 50-litre crates. 100% destemming, followed by 22 days’ vatting without punching down, with pumping over every two to three days. 15% of the ageing takes place in 228-litre barrels, the remainder in cement vats, for a total of 10 months.
